I love peaches! If asked what is one food I could live off of only it would definitely be peaches! I gorge myself on them all summer, scouring farmers markets, grocery stores and side of the road stands for the best peach. By the end of the summer its always a bit sad to see them go and I end up buying a couple of flats in frantic denial when I hear "this is the last of them" from the best stand at the farmers market.
Well then three days later when they are all starting to mold at once and even I who has the greatest capacity to eat more peaches than anyone I know can't take another bite but can't believe I can't save them even until next week; drastic measures need to be taken.
The only answer is pie and crisp. Both easy and wonderful options.
And the best news is... make two! Put one in the freezer until November when peaches are only a distant memory, then bring it out, defrost, bake and delight in the promise of a sunny day once again. One of my favorite is to make mini pies (single or double serving) then you have fresh pie whenever you want!
